Ingredients

  • 1. 3 tbsp extra-virgin Coconut Oil
  • 2. 1 Red Onion, chopped
  • 3. 1 Clove Garlic, minced
  • 4. 4 Tomatoes, chopped
  • 5. 3 cups Cherry Tomatoes, halved
  • 6. 3/4 cup Vegetable Broth
  • 7. 2 Bay Leaves
  • 8. 2 Sprigs fresh Basil, divided
  • 9. Salt to taste

Instructions

Heat coconut oil in a pot over low heat and cook the chopped onions until soft and translucent. Next, add garlic and cook until fragrant.

Increase heat to medium and add all the tomatoes and salt and cook until they start to break down, stirring occasionally.

Add vegetable broth, bay leaves, and 1 sprig of basil. Bring to a boil. Then, reduce heat and simmer until tomatoes have broken down and soup starts to thicken. Remove soup from heat and let cool. Also remove bay leaves and basil.

Puree tomato soup using a blender until smooth. Reheat the soup before serving and garnish with remaining basil leaves and freshly ground black pepper.

Notes

Tips:
1) Avoid peeling the tomatoes as there are lots of vitamins and fiber in the skin. Instead, puree the soup well.
2) Use half cherry tomatoes and half regular tomatoes for best results.
3) You may also garnish the soup with cashew cream for added richness.
4) If you like your soup chunky, save a portion of the tomatoes before blending!
