Vegan Thai Yellow Curry Paste

Ingredients

  • 1. 20 Dried Thai Chilies
  • 2. 4 small Shallots
  • 3. 4 cloves Garlic
  • 4. 1/2 cup Fresh Ginger, peeled
  • 5. 1 1/2 tbsp Salt
  • 6. 3 tbsp Turmeric Powder
  • 7. 3 tbsp Curry Powder (Homemade Curry Powder Recipe or use store bought)
  • 8. 2 tbsp Coriander Powder
  • 9. 1 Lemongrass Stalk
  • 10. 1/4 inch Galangal Root
  • 11. 3/4 cup Water

Instructions

Soak the dried chilies in water for 5 mins to re-hydrate.

Remove the root end and the tough outer leaves of the lemongrass and cut it into small pieces.

Add the drained chilies, lemongrass and rest of the ingredients and make a thick smooth paste using a mortar and pestle or blender.

Keep refrigerated in an airtight container.

Notes

1. Refrigerated paste is good for a week.
2. Make use of a mortar and pestle for best results as it brings out the true flavors of the various spices.
