Crispy Tapioca Pearls Patties (Crispy Sabudana Vada)

Sabudana Vada or Tapioca Pearls Patties are a very popular snack in Maharashtra, India. They are made of a mildly seasoned combination of sabudana (sago or tapioca pearls), mashed potatoes and crunchy peanuts that are formed into patties and fried crispy! These sago fritters also make a very popular fasting (upvas or vrat) recipe due to the balanced amount of carbohydrates and proteins in it. These tasty patties are crunchy on the outside and spongy inside and pair really well with sweetened yogurt and a hot cup of chai!

Crispy Tapioca Pearls Patties (Crispy Sabudana Vada)

Ingredients

  • 1. 1 cup Tapioca Pearls
  • 2. 2 Potatoes, boiled & mashed
  • 3. 1 cup Peanuts, roasted & crushed
  • 4. 1 Green Chili , finely chopped
  • 5. 2 tbsp Cilantro, finely chopped
  • 6. 1 tsp Lemon Juice
  • 7. Salt to taste
  • 8. Oil for frying

Instructions

Soak 1 cup sabudana (tapioca pearls) overnight in an equal amount of water. Once soft, drain the water completely.

In a mixing bowl, add the soaked pearls, mashed potatoes and crushed peanuts, green chili, cilantro, lemon juice and salt.

Combine and mash well. Then pinch a medium sized ball and flatten to form patties.

Deep fry the patties on a medium heat. Alternately, you can shallow fry them too.

Your Crispy Tapioca Pearls Patties (Sabudana Vadas) are ready to serve with hot masala chai!

Notes

Tips:
1) Soaking time of the sabudana (sago pearls) varies with each type of sabudana. A good rule of thumb is to soak them for atleast 4-6 hours keeping 1:1 sabudana to water ratio.
2) Potatoes help to bind the vada. If you find the patties breaking in oil, just add more potato to the dough.
3) Adding coarsely crushed peanuts gives a nice texture and a crunchy bite to the patties and also helps to absorb moisture from the sago.
4) If you are preparing this as a fasting recipe, replace regular salt with rock salt.
