Chipotle Black Beans

This vegan black beans recipe is inspired from the famous Chipotle Mexican Restaurant. Very easy to prepare, make this at home to enjoy your black beans – Chipotle Style!! ๐Ÿ˜€

Ingredients

  • 1. 1 cup dried black beans or 1 canned black beans
  • 2. 1 red onion chopped
  • 3. 2 garlic cloves minced
  • 4. 2 tbsp vegetable oil
  • 5. 2 cups water
  • 6. 1 bay leaf
  • 7. 1 tsp salt
  • 8. 1 tsp chili powder
  • 9. 1 tsp cumin
  • 10. 1/2 tsp coarse black pepper
  • 11. 1/2 tsp dried oregano
  • 12. 2 tbsp lemon juice
  • 13. 2 tbsp lime juice

Instructions

If using dried black beans, rinse and soak black beans overnight and pressure cook it. You can skip this step if you using canned beans.

Heat oil in a large skillet over medium-high heat. Add bay leaf and chopped onions, sautรฉ until onions begin to turn soft and translucent. Then add chopped garlic and cook for 30 seconds or till fragrant.

Add rest of the seasonings (bay leaf, salt, chili powder, cumin, oregano, black pepper) and mix well

Add in the beans and water and slow cook for 15 mins until it thickens.

Add in the lemon and lime juice.

Remove the bay leaf before serving and enjoy your Black Beans - Chipotle Style! ๐Ÿ˜‰๐Ÿ‘
