Tri-Color Curry Pasta

Well, who doesn’t like Pastas?? Although they originated in Italy, today Pastas are so popular and common in every household across the world!ย  Tri-Color Curry Pasta is my take on the Italian Pasta recipe, giving it an Indian twist with Indian spices and herbs to bring out a luscious, spicy, tangy and rich Indo-Italian Pasta with whole veggie goodness. In this recipe I am using Tri-color Rotinis or Rainbow Twirls variety of pasta which adds to the nutritive value of the entire dish due to the combination of spinach, tomatoes and enriched wheat flour in the pasta itself! So, come along…. Let’s take the Pasta on an Indian expedition..!! ๐Ÿ˜€

Tri-Color Curry Pasta

Ingredients

  • 1. Tri-color Rotinis or Rainbow Twirls - 500 gms
  • 2. Sliced Onions - 1/2 cup
  • 3. Diced Tomatoes - 1/4 cup
  • 4. Chopped Green Beans - 1/4 cup
  • 5. Diced Carrots - 1/4 cup
  • 6. Green Peas - 1/4 cup
  • 7. Garam Masala - 2 tsp
  • 8. Kasoori Methi (Dried Fenugreek Leaves) - 1 tsp
  • 9. Pasta Sauce - 2 tbsp
  • 10. Butter - 2 tbsp
  • 11. Shredded Mozzarella Cheese - 1/4 cup
  • 12. Coconut Oil - 1 tbsp
  • 13. Cumin Seeds - 1 tsp
  • 14. Red Chili Powder - 1 tsp
  • 15. Cilantro Leaves, Finely Chopped - 1/4 cup
  • 16. Salt to taste

Instructions

In a large pan, bring water to a rapid boil. Add salt, a few drops of oil and toss in all the tri-color pasta. Let it cook until al dente. Strain and keep aside.

Heat coconut oil in a large pan on medium heat. Add the cumin seeds and onions. Once the onions are translucent, add the tomatoes and saute until soft and mushy. Add garam masala, kasoori methi, red chili powder and mix well.

Now, add pasta sauce, butter, salt, half the cilantro leaves and the remaining vegetables and let it cook covered. Add some water if required.

Next, gently mix in the cooked pasta, keeping the heat on low.

Top it with the remaining cilantro leaves and shredded mozzarella cheese and your luscious Tri-Color Curry Pasta is ready to serve hot!

Notes

Tips:
1) After straining the boiled water, you may rinse the pasta in cold water to keep it from sticking to one another.
