Mixed Vegetable Curry (Kadai Veg)

Kadai Veg simply transaltes to Mixed Vegetable Curry cooked in a Kadai, a bowl-shaped Indian frying pan with two handles, similar to a Chinese Wok. This is a wholesome Punjabi cuisine; healthy, nutritious and full of flavor. I used a variety of vegetables in this recipe such as carrots, cauliflower, green beans, green peas, zucchini, green bell peppers etc. You can get creative and add a mix of your favorite veggies but, green bell peppers are a must! The Mixed Vegetable Curry or Kadai Veg serves as a fantastic accompaniment for rotis, naan or any flatbread and rice too!

Ingredients

  • 1. Green Beans (cut into 1 inch pieces) - 1/2 Cup
  • 2. Carrots (cut into small cubes) - 1/2 cup
  • 3. Cauliflower Florets - 1 Cup
  • 4. Green Peas - 1/4 Cup
  • 5. Zucchini (cut into discs and halved) - 1/4 cup
  • 6. Green Bell Peppers (diced) - 1/2 Cup
  • 7. Lima Beans - 1/4 Cup
  • 8. Coriander Powder - 1 tbsp
  • 9. Cumin Powder - 1 tsp
  • 10. Red Chili Powder - 1 tsp
  • 11. Garam Masala Powder - 1 tsp
  • 12. Turmeric Powder - 1/2 tsp
  • 13. Yogurt (thin it with water) - 1 Cup
  • 14. Garlic - 2 Cloves
  • 15. Green Chili - 1-2 (per your preference)
  • 16. Ginger - 1 inch
  • 17. Onion (finely chopped) - 3/4 Cup
  • 18. Tomatoes (roughly chopped) - 2 nos.
  • 19. Oil - 4 tbsp
  • 20. Fresh Cilantro Leaves (chopped) - 4 tbsp
  • 21. Salt to taste

Instructions

Marinate all the powdered spices (coriander, cumin, red chili, garam masala and turmeric powders) in yogurt for 10 mins.

Grind ginger, garlic and green chilies to a paste.

Heat oil in a kadai (or a large pan). Add the onions and saute till golden brown. Add in the ginger-garlic-green chili paste and saute for a minute.

Except green bell peppers, add all the vegetables, salt and water and cook it covered until almost done.

Add in the marinated spices and stir continuously. Also add the tomatoes and green bell peppers and simmer for another 5 minutes.

Sprinkle some garam masala powder and garnish with the chopped cilantro leaves and serve hot with your favorite flatbread!

Notes

Tips:
1) You can also garnish the curry with ginger cut into thin strips. The extra crunch it provides to the curry is simply terrific!
