Savory Green Leafy Pancakes (Mashinga Pathiye Polo)

Savory Green Leafy Pancakes (called Mashinga Pathiye Polo in Konkani) is a very healthy variety of dosa/ pancake. It is highly nutritious because of the drumstick leaves and includes iron, folic acid, magnesium, calcium and a bunch of vitamins. But don’t be fooled by its “healthy looks”…ย ๐Ÿ˜„ย It is simply sumptuous to taste!! It is really easy to prepare and is a great breakfast to start the day with. Some people also like to consume it as an evening snack. And guess what… this dosa doesn’t even need a side dish/ dip! It tastes great on its own. But if you like it, you can pair it with some pickle. I personally prefer the way Mom used to serve it to me as a kid… Hot pancake just off the pan with a chunk of butter that melts and coats it all over… mmmm… heavenly!!ย ๐Ÿ˜‹๐Ÿ˜‹

Ingredients

  • 1. Raw Rice - 3 cups
  • 2. Red Chili - 5 nos.
  • 3. Grated Coconut - 1 cup
  • 4. Drumstick Leaves (well cleaned) - 1 cup
  • 5. Tamarind Paste - 1/2 tbsp
  • 6. Turmeric Powder - 1 tsp
  • 7. Asafoetida - 1/8 tsp
  • 8. Salt to taste

Instructions

Pre-soak the rice for 3 hours.

Except the drumstick leaves, grind all the ingredients together to a fine batter of flowing consistency.

Now add the leaves to the batter and mix well.

To a pan, on medium heat, add a ladle of the batter and spread in circular motion. Let it cook covered for 1-2 mins.

When one side is done, flip and fry the other side for a few seconds.

Notes

Tips:
1) The batter can be prepared in advance for use whenever required. This recipe makes about 25-30 pancakes.
2) The same recipe can be prepared with fenugreek leaves or finely chopped cabbage and tastes just as great!
