Homemade Vegan Strawberry Fudge

Ingredients

  • 1. 2 cups Sugar
  • 2. 1/2 cup Water
  • 3. 1 tsp Lemon Juice
  • 4. 1 cup Homemade Strawberry Preserves
  • 5. 1/4 cup Coconut Oil

Instructions

Grease an 8 x 8 inch square pan and keep aside.

In a saucepan add sugar, water and lemon juice and bring to a boil. Heat until a small amount of syrup dropped into cold water forms firm but pliable balls.

Stir in the homemade strawberry preserves and return to a boil. Then remove from heat.

Slowly pour the strawberry mixture over the coconut oil, stirring constantly. Beat until thick and smooth.

Pour into prepared pan. Cool for 2 hours, or until firm. Cut into squares or your preferred shape.

Notes

If you are using a candy thermometer, heat the syrup to 242 - 248 degrees F (116 - 120 degrees C).
