    Ingredients

    • 1¼ cup warm milk
    • 2 tsp sugar
    • 7 grams dry yeast
    • 3 cups (450 grams) maida / plain flour
    • ½ tsp salt
    • 2 tbsp softened butter

    Instructions

    1

In a bowl, combine warm milk, sugar, and dry yeast. Set aside for 5-10 minutes until frothy to activate the yeast.

    2

Add plain flour and salt to the yeast mixture, then knead until a soft dough forms.

    3

Incorporate softened butter and knead again until the dough turns smooth and elastic.

    4

Cover the dough with a cloth or plastic wrap and let it rise in a warm spot for 2 hours, or until doubled in size.

    5

Gently punch down the dough to release air, then divide into 12 equal portions and shape into smooth balls.

    6

Arrange the dough balls in a greased baking tray, keeping space between each.

    7

Brush the tops with milk for a golden finish, then cover and let them rise again for 20 minutes until puffy.

    8

Preheat oven to 180°C. Bake for 20 minutes or until the pav are golden on top.

    9

Once baked, brush with butter and cover with a damp cloth to ensure extra softness as they cool completely.

    10

Serve warm with your favorite dishes.

    Notes

    Tips:
Knead the dough thoroughly for at least 10-15 minutes to achieve soft, airy rolls., Allow the dough adequate time to rise both before and after shaping for the best texture., Brushing the tops with milk before baking gives them a rich color, while a butter finish keeps them glossy and moist., Covering with a damp cloth post-bake helps preserve their super-soft crust.
