    Ingredients

    • 5 slices bread, white or brown, roughly chopped
    • 2 tsp butter
    • 2 cloves garlic, finely chopped
    • 1 green chilli, slit
    • 2 tbsp spring onion, finely chopped
    • ½ onion, finely chopped
    • ½ carrot, finely chopped
    • 2 tbsp cabbage, finely chopped
    • 2 tbsp capsicum, finely chopped
    • 2 tomatoes, finely chopped
    • 1 tsp pav bhaji masala
    • ½ tsp salt
    • 2 tbsp tomato sauce

    Instructions

    Melt the butter in a large pan over medium heat. Sauté the chopped garlic, slit green chilli, spring onion, and onion until they begin to soften.

    Stir in the carrot, cabbage, capsicum, and chopped tomatoes along with half the salt. Cook until the vegetables are slightly tender but still colorful.

    Sprinkle the pav bhaji masala and the remaining salt, mixing thoroughly to coat the vegetables.

    Pour in the tomato sauce and combine well to create a lush, spicy base.

    Gently toss in the bread pieces, folding them with the masala mixture so they’re coated and warm. Cook briefly, just until the bread edges are crisp.

    Garnish with freshly chopped coriander and serve immediately while hot and crunchy.
