    Ingredients

    • 3 large potatoes, peeled and cut into ½ inch cubes
    • Extra virgin olive oil, for frying
    • 2 tbsp olive oil
    • 2 cloves garlic, peeled and minced
    • 1 tbsp paprika
    • 1 tbsp tomato paste
    • ¼ tsp chili powder
    • 1 handful fresh cilantro, chopped
    • ¼ tbsp salt

    Instructions

    In a large skillet, heat 1 inch of extra virgin olive oil over medium-high heat to 350°F.

    Fry the potato cubes for 3-5 minutes until golden and crispy, then remove with a slotted spoon onto a paper towel-lined plate.

    In a separate skillet, heat 2 tablespoons olive oil over medium heat and sauté the minced garlic until golden and fragrant.

    Add the fried potatoes, paprika, tomato paste, and chili powder to the pan, stirring to ensure the potatoes are evenly coated.

    Remove the skillet from heat, then fold in the chopped cilantro and salt.
