    Ingredients

    • 1 tsp butter
    • 1 clove garlic, finely chopped
    • ½ onion, finely chopped
    • 1 carrot, finely chopped
    • 3 tbsp sweet corn
    • ½ capsicum, finely chopped
    • ¼ tsp salt
    • 3 tbsp pizza sauce
    • 4 olives, sliced
    • 1 tsp jalapeno, chopped
    • ¼ cup mozzarella cheese, grated
    • 9 bread slices, white or brown
    • Water for sealing
    • Oil for frying

    Instructions

    Melt butter in a large pan and sauté the chopped garlic and onion until fragrant.

    Add carrot, sweet corn, capsicum, and salt. Stir-fry over high heat until the vegetables are soft.

    Mix in the pizza sauce until everything is well combined, then transfer the mixture to a bowl and let it cool.

    Stir the sliced olives, jalapenos, and grated mozzarella into the cooled vegetable mix.

    Trim the edges of each bread slice and use a rolling pin to flatten them out.

    Place a spoonful of the filling in the centre of each slice, fold over, and use water to seal the edges securely.

    Heat oil in a pan and deep fry the pockets over medium heat until golden and crisp. Alternatively, bake in a preheated oven at 180°C for 15–20 minutes.
