    Ingredients

    • 2 tablespoons olive oil
    • 1 cup uncooked brown rice
    • 1/2 red bell pepper, chopped
    • 1 onion, chopped
    • 2 teaspoons crushed garlic
    • 2 cups water
    • 1 (10 ounce) can diced tomatoes
    • 2 teaspoons chili powder
    • 1 teaspoon salt

    Add the brown rice, bell pepper, onion, and garlic to the skillet. Sauté everything together, stirring frequently, until the rice is slightly toasted and the onions have softened, about 5 minutes.
