Ingredients

  • 1 cup peanuts
  • 2 tsp oil
  • few curry leaves
  • ¼ tsp turmeric
  • ¼ tsp Kashmiri red chilli powder
  • ¾ tsp crushed black pepper
  • pinch of hing (asafoetida)
  • ½ tsp salt
  • 2 tbsp finely chopped onion
  • 2 tbsp finely chopped tomato
  • 2 tbsp grated carrot
  • 2 tsp finely chopped coriander
  • 1 tsp lemon juice

Instructions

Heat oil in a pan and add curry leaves, roasting them over low heat until crisp.

Add turmeric, chilli powder, crushed pepper, and hing, sautéing on low without letting the spices burn.

Mix in the roasted peanuts and salt, stirring well until the peanuts are evenly coated with the spice blend, then remove from heat.

Lightly crush the crispy curry leaves into the peanut mixture.
